The Shines Irish cookbook has lots of great Irish food recipes focused on – obviously – Irish fish
As you know we brought out our very own Irish cookbook last year called Ciara’s Catch with lots of great Irish food recipes – and it has been a wonderful experience. We have received so much positive feedback about it! Truly overwhelmed by all the nice comments!
In the book we talk a lot about Shines Seafood and its reputation as an Irish food company. We also have lots of fish recipes by Ciara herself.
However, we also included lots of Irish recipes by chefs, cooks and people we love! They were so kind to supply them.
Here are a few examples:
1. Tuna Pate
The recipe for Tuna Pate in the cookbook was created by the late chef Nicky Cullen of Mary Barry‘s Restaurant in Kilmore, County Wexford.
If you are ever in the sunny southeast, you simply have to eat there. We met Nicky a while back when searching for someone to make tuna pate with our products. We didn’t need to look any further once we met him! Not only was Nicky an absolute gentleman but he also had an incredible passion for seafood and cooking. Nicky developed this delicious recipe and kindly let us share it.
2. Tuna Pesto Rolls
The Tuna Pesto Rolls recipe is from the brilliant Orla Grennan/Drumgoole. Orla was a Shines Ambassador and continues to be a long-time supporter of what we do. A now retired secondary school teacher, she has shifted her focus to her @irishmammycooks Instagram account where she shares healthy, easy family meals.
3. Goatsbridge Fish Pie
The delicious recipe for Goatsbridge Fish Pie in the book is by the renowned Mag Kirwan. Goatsbridge Rainbow Trout is a thriving, second generation Irish fish business based in Kilkenny run by husband and wife team Ger and Mag Kirwan. Their passion for and knowledge of trout is clear to see – and taste – in their top quality produce! 4. Linguine with Chilli Tuna and Toasted Pesto Bread Crumbs
This Linguine with Shines Chilli Tuna recipe is by the amazing Caitriona Barron! Not only is she a great photographer and a great friend, but she’s also a great chef. This recipe is a fresh and easy meal made a store covered staples; it only takes 20 minutes and you really have to try it.
5. Gambas Pil Pil
The Gambas Pil Pil recipe in the book is by Deirdre McNiff. Deirdre is from the best place in the world: Donegal!!! She was one of our first brand ambassadors and quickly became a family friend.
