Rustic Tuna Mini Quiches

Tuna Quiche
These scrumptious quiches tart up your meal full of flavours and chunks of shines fillet tuna.

You Will Also Need:

1 packet of ready to roll shortcrust
350 ml double cream
3 eggs 2 yolks
2 tbs of parmesan
2 tbs of sharp cheddar
185g jar of shines tuna in oil drained
80g sundries tomatoes
50g mixed roasted red peppers chopped
2 tbs shredded basil
Salt and pepper

Method:

Blind bake your pastry in 6 small individual tins or one large tin for 12 mins then use left over egg white and paint the base pop back into oven for 5 mins to seal. Set aside

Make custard
Mix eggs cream salt and pepper

Arrange tuna, half of the tomatoes, peppers, half of the basil and cheese pour over custard and top with remaining tomatoes basil and cheese bake for 18 mins or if using large dish 25 mins let rest for 5 mins and serve with a green salad hot or cold. Enjoy
